Rice is at the heart of Persian cuisine. A wide variety is cultivated in Persia itself, primarily in the northern region along the Caspian Sea coast. Humidity there can reach up to 99% in warm seasons, making it ideal for rice cultivation. However, rice is also grown in seemingly dry areas, such as the southwest region around Shiraz, where the soil retains enough water. Rice originally comes from East and Southeast Asia. It was certainly present in Persia since ancient times, and it became the dominant national dish under the Safavids. All Iranian rice varieties are variations of Basmati rice, and Basmati rice comes at a price.
